Held on days ending in 2 and 7 (2nd, 7th, 12th...), Jeongseon's traditional market is one of the last genuinely functioning 5-day markets in Korea, not a tourist reconstruction. Vendors arrive from mountain villages throughout Jeongseon county selling foraged gondeure (thistle greens), wild garlic, dried river fish, and homemade corn makgeolli in repurposed water bottles. The gondeure bibimbap sold at stalls around the market is the version that gave this dish its regional fame — the real thing is earthier and less sweet than Seoul restaurant versions. Go on a market day, arrive before 10am for the full spread, and bring cash in small bills.
